    Stillwell’s in Dallas is truly a cut above. Nestled in the Hôtel Swexan, this Michelin-recommended gem offers an experience that is both sophisticated and deeply satisfying. We started with the Grand Shellfish Tower, which was an absolute showstopper—fresh oysters, jumbo shrimp, and crab claws presented beautifully on ice. For the main event, the HWD Filet (their bespoke in-house beef program) was cooked to a perfect medium-rare, served alongside a rich bordelaise and a head of roasted garlic that spread like butter. The sides are just as impressive as the steaks. The Mac & Cheese was incredibly creamy with a perfect parmesan breadcrumb crust, and the Stillwell's Onion Ring—served as one giant, hand-battered masterpiece—was light and crisp. We also loved the Charred Broccolini for a touch of brightness and "crunch." To finish, the Vanilla Bean Cheesecake with caramel cinnamon apples was the perfect balance of tart and sweet. The service was impeccable, with staff in white jackets providing that classic, upscale steakhouse feel. Whether you're a local or just visiting, Stillwell's is a five-star destination that delivers on every front.

    First time dining here. Everything was delicious and service was very good as well. Will definitely put it on our rotation of our usual restaurants. We shared the petite cold tower, the dumplings, wedge, and really enjoyed the caviar service. It was served in its original tin and not in a bowl (like some places do, I always frown upon that). The chablis was delicious and my husband enjoyed the side car cocktail. This restaurant is great for special celebrations as well as dinner out with friends or family. I highly recommend it.

    Walking in felt like stepping into J.R. and Bobby Ewing's private dining room. The décor is dark and moody yet grand and opulent. The bar area is separate from the formal dining room, where we were seated beside a massive, central fireplace with cowboy hats lining the walls. The vibe is pure upscale Texas cattle-ranch luxury. From the place settings to the linen tablecloths and napkins to the tuxedoed service, everything felt intentional and impeccably curated. Service was formal in the best way--they even served from the proper side each time. The attention to detail was next-level, down to removing the seeds from the lemon slices. This is truly a meat lover's paradise. No part of the cow goes to waste. Portions are generous, and even ordering only appetizers felt like a full four-course meal. The crab bake was a huge mound of fresh, buttery crab--absolutely delicious. The pork belly over grits was an excellent pairing; the grits were fluffy, creamy, and melted on the plate, while the pork belly was rich and flavorful. The bone marrow dish missed the mark for me--it arrived as a bone filled with shredded beef mixed with marrow and topped with scrambled eggs, but I was hoping for traditional marrow and bread. And the bread--fluffy, soft, and paired with incredible butter. Pace yourself. The true standout was the beef dumplings. The gravy was so good I shamelessly used the bread to soak up every last drop and nearly licked the bowl. Tomas took exceptional care of us. I stepped away for what turned into an impromptu restroom photo shoot and returned to find him waiting patiently at my seat (!!), my napkin perfectly refolded and placed back in my lap once I sat. That level of service says everything. The night ended perfectly with a decadent, moist chocolate cake for my daughter's birthday. When the check arrived, we were treated to chocolate-caramel candies that actually contain bone marrow--proof that no part of the cow goes to waste. We loved the experience and can't wait to return.
